Vinification
Hand harvested, 100% whole cluster grapes in the amphora, with carbonic maceration for 8 to 10 days. Foot trodden and left to ferment several more days.
Aging
After fermentation, they seal the amphora and let it rest for 8 months. After the long maceration, they rack the wine twice by moon calendar and bottle.
