From certified organic vineyards. Pre-fermentation maceration on the skins. Spontaneous fermentation with natural yeasts for each variety separately, temperature controlled, in stainless steel tanks.
Aging
Aged in new 225L and 1-2-year-old French oak barrels for 12 months and for 6 years in bottle before release.
