Vinification
From certified organic vines made in the saignee method. Selection of the best bunches. Maceration with the skins for 18 hours. Made with free run juice. Spontaneous fermentation with natural yeasts at low temperature for 40 hours in stainless steel tanks.
Aging
Aged in bottle for 6 months before release. Light fining and filtration, sulphur only on bottling.
