Vinification
Hand harvested in early September. 70% destemmed, 30% whole cluster, spontaneous fermentation.
Aging
Aged for 14 months in used French oak foudres and barrels, 50% under a veil of flor and 6 months in stainless steel. Bottled in March 2021.
