Vinification
Hand harvested, fermented separately - Merlot was the first to been harvested, looking for low alcohol content and a lot of freshness, while the Muscat Ottonel was harvested at the maximum point of maturation, macerated with skins for a week to provide aromatics and body.
Aging
Native yeasts for fermentation, only tank for aging - blended and bottled with no fining, filtration, or added SO2.
