Hand harvested, direct pressing, and cold decantation for 36 hours (preserving all the delicate aromatics and acidity). Spontaneous fermentation in a 55-liter demijohn.

End of fermentation in the bottle, minimum aging of 24 months. Disgorged by hand only upon order, with zero dosage.
