Vinification
Hand harvested, 85% of the grapes are destemmed and spontaneously fermented in stainless steel tanks. 15% is fermented separately with the skins.
Aging
Aged partially in 2,000L French oak foudres and stainless tanks - both for 12 months on the lees. After aging they are blended back together.
