Vinification
Hand harvested, vinification in open tanks of maximum 1000 liters with 80% whole clusters. Spontaneous fermentation and maceration between 25 and 30 days, gentle manual pumping over daily.
Aging
Spontaneous malolactic and aging in 100% used French oak barrels.
