Hand harvested, foot treading for 2 hours and skin contact for 48 to 72 hours, separate spontaneous fermentation with indigenous yeasts in stainless steel.
Aging
Gravity decanted into old neutral French barrels (4-8th year use) where it finishes alcoholic fermentation and malolactic and ages for 6 more months. Blended 1 month before bottling, 45mg total Sulphur added.
