Vinification
Hand harvested with selection of grapes in the vineyard. At the winery, another selection on a sorting table, destemmed and 5% of whole bunch in an open bucket of 1000 L.
Aging
Racked out directly to several neutral oak barrels of 225 L where it ages for around 12 months.
