Vinification
Vines are dry-farmed, picked by hand and fermented separately. Cinsault is fermented in stainless steel, Pais is fermented spontaneously in cement tanks, both with native yeasts.
Aging
Fermentation continues through the following cool spring temperatures in the same tank and concrete.
